Arrumadinho – the “little tidy one”

Arrumadinho (the diminuitive of “neat” or “tidy”) is a typical dish from Pernambuco. Its name comes from the style in which it’s served: the ingredients are neatly arranged side by side, to then be mixed on the plate. It’s made with macaxeira (cassava) or charque (jerky), farofa, vinaigrette, green beans and seasoned with clarified butter.
